Ingredients

  • 3 cups stale bead (leftover sourdough, artisan, or french bread tastes delicious)
  • ¼ cup salted butter or olive oil (I like using half of each)
  • ½ tsp garlic powder
  • 1 tsp Italian seasoning
  • 3 TB parmesan cheese freshly grated

Instructions

  • Preheat oven to 375° F.
  • Cut up bread in small chunks to create about 3 cups.
  • Melt 2 TB of butter and mix with 2 TB olive oil (or do all of one kind) in a small bowl. Add garlic powder, Italian seasoning, and fresh parmesan cheese. Mix together.
  • Add the butter mixture to the bead pieces and gently toss together until the bread is evenly coated.
  • Spread evenly on a baking sheet lined with parchment paper and bake for about 10 minutes. Give it a gentle toss and bake for another 5-10 minutes, until lightly golden brown.
  • Top salad with croutons and store any leftovers in an airtight bag/container.
